White-on-White Pears with Gorgonzola

So simple, yet so good. You can't go wrong mixing tangy cheese with juicy, fresh pears. Add sprinkling of toasted pine nuts and a splash of olive oil with red wine vinegar, and it's divine.

Ingredients

  • 6 medium Bartlett pears, cored and sliced
  • 1 C. crumbled Gorgonzola dolce (Dolce lattĂ© cheese) or blue cheese
  • 1/3 C. pine nuts, toasted
  • 1/4 C. extra-virgin olive oil
  • 1/4 C. red wine vinegar
  • Cracked black pepper

Directions

Arrange pear slices on chilled salad plates. Sprinkle with cheese. Top with pine nuts. For dressing: In a screw-top jar, combine oil and vinegar. Cover and shake well. Drizzle over pear mixture. Sprinkle pear mixture with black pepper. Serve immediately. Makes 6 side-dish servings.
