Whitefish ceviche is a summer classic, and this recipe adds a tremendous depth of flavor with the addition of lime. Serve this with some chips and a margarita, and the party is started!

  • 2 lbs. tilapia filets, diced
  • 1 1/2 C. lime juice
  • 1/2 C. tomato, seeded and chopped
  • 1 med. red onion, sliced
  • 1/2 C. fresh cilantro
  • 1/2 C. tomato juice (or clam-tomato juice)
  • 1 Tbs. tabasco

Mix all the ingredients together and chill for 20 minutes or until the fish has cured completely (it will turn white). Serve.
