  • 1 yellow onion, sliced
  • 3 potatoes, peeled and chopped
  • 2 lemon
  • 1 (4.5 lb.) whole chicken, rinsed and patted dry
  • 3 Tbs. fresh thyme
  • 3/4 C. dry vermouth
  • Salt and pepper to taste

Preheat your oven to 500 degrees F. Place onions and potatoes in center of a roasting pan. Slice one of the lemons and place on top. Rub chicken with salt and pepper. Season with thyme. Place chicken on top of potatoes. Roast the chicken for 45 minutes or until golden brown. Let the chicken rest for 10 minutes before carving. Place roasting pan with onions and potatoes across two burners over medium heat. Add dry vermouth and scrape up any browned bits from the bottom of the pan with a wooden spoon. Transfer the onions and potatoes to plate with remaining lemon slices. Serve with chicken.
