Baked potatoes are and awesome choice side to any dinner simply because they can be prepared in so many different ways. Skin off or skin on, baked potatoes can be enjoyed in their whole entirety. Leaving the skin on the potato during the baking process gives the potato an opportunity to absorb other flavors paired with it during preparation.

  • 4 Yukon Potatoes
  • 2 Pieces of Country ham sliced and cubed
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 1 Stick of Butter
  • 1 Tbs Finely Chopped Parsley
  • 1 Clove of Chopped Finely Garlic

Cut the country ham into strips and freeze until hard for about 20 to 30 minutes. Preheat oven to 350 degrees. Cut crosswise into each potato about 1/8 apart from each other. Place potatoes into a pot of boiling water with salt for 4 minutes. Remove and transfer to a baking sheet to cool and then pat dry. Insert 3 pieces of frozen country ham into each potato through the slots. Make sure bacon is sticking out at the top. Melt at least 5 tablespoons of butter and apply all over the potatoes and in the cut slots. Sprinkle salt and pepper on top. Bake the potatoes in the oven until the outsides are brown and crisp for about an hour to 1 1/2 continuously brushing melted butter onto potatoes during the baking process. When potatoes are done, melt the remaining butter and mix with parsley and garlic. Apply the mixture to the potatoes and let cook for another 5 minutes. Once finished cooking, sprinkle with salt and pepper and serve.
