Whole Wheat Pumpkin Bread

Using whole wheat flour adds nutrients to this festive fall bread.

  • 4 eggs, beaten and placed in large bowl
  • 1 C. vegetable oil
  • 1/2 C. water
  • 1 C. canned pumpkin (not pie filling)
  • 1 1/4 C. molasses
  • 1 C. brown sugar
  • 3 C. whole-wheat flour
  • 1 1/2 tsp. salt
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. ground cloves
  • Chopped walnuts (optional)

Beat eggs and place in large bowl. Add vegetable oil, water, pumpkin, molasses and brown sugar. Sift in remaining ingredients. Stir everything together until the batter is smooth. If you like, you can add some chopped walnuts at this time. Butter 2 loaf pans and pour batter 2/3 full in each. Bake 45 minutes to 1 hour. Let cool and invert pan. Good with cream cheese spread on each slice.

  • My daughter and I made this for a tailgate this fall. It disappeared before our eyes. We have subsequently made it for Christmas gifts. It is rich, moist, luscious, delicious--soooo good!!!!
