  • 2 lb. boneless skinless chicken breast halves
  • 1 14.5-oz can diced tomatoes
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 red onion, sliced
  • 1 lemon, sliced
  • 4 cloves garlic, minced
  • 2 1/2 tsp. chili powder
  • 2 tsp. ground cumin
  • 1 tsp. paprika
  • 3/4 tsp. ground coriander
  • 1 tsp. salt
  • 3/4 tsp. pepper
  • 2 T. fresh lime juice
  • 9 flour tortillas, warmed (or desired amount)

Add half of the diced tomatoes to the bottom of your crockpot. Cover with half of the peppers and onions. Sprinkle with garlic and top with chicken. In a small bowl, mix together chili powder, cumin, paprika, coriander, salt, and pepper. Sprinkle half of the mixture to evenly cover the exposed side of the chicken. Flip the chicken over and sprinkle with the remaining seasoning mixture. Layer with the lemon slices and cover with remaining tomatoes, peppers, and onions. Cover and cook on high for three hours or low for six hours. Remove the chicken and cut into strips. Remove the lemons and one cup of the liquid and discard. Return the chicken to you crockpot and stir in lime juice and additional seasonings if desired. Spoon onto the center of the warm tortillas and serve.
