  • 1/3 C. extra virgin olive oil
  • 1/2 C. maple syrup
  • 2 eggs, at room temperature
  • 1 C. pumpkin purée
  • 1/4 C. milk
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon, plus more for topping
  • 1/2 tsp. ground ginger
  • 1/4 tsp. nutmeg
  • 1/4 tsp. allspice or cloves
  • 1 3/4 C. whole wheat flour
  • 1/3 C. old-fashioned oats, plus more for topping

Preheat your oven to 325°F and grease the inside of 10 cups in a muffin tin. In a large bowl, whisk together oil and maple syrup. Add eggs one at a time, beating after each. Add pumpkin and mix well. Pour in milk and add baking soda, vanilla, salt, cinnamon, ginger, nutmeg, and allspice. Gradually add flour and oats, mixing until just combined. Distribute batter evenly into your prepared muffin tin and sprinkle with extra oats and cinnamon if desired. Bake for about 25 minutes. Let stand for 10 minutes before removing from muffin tin.
