  • 1 ¼ cup shortening
  • 1 cup sugar
  • 1 cup milk
  • 2 eggs, separated
  • 2 cups flour
  • 5 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups confectioner’s sugar
  • 2 teaspoon vanilla

Lightly grease 2 cookie sheets and preheat the oven to 350 degrees F. Then in a large bowl, cream ½ cup shortening with 1 cup sugar and 2 egg yolks. In another bowl, sift the flour, cocoa powder, baking soda, baking powder, and salt. Mix the two bowls together alternating with the milk. Beat the bowl well. Next add the 1 teaspoon vanilla and stir. Drop tablespoons of batter onto the cookie pans and then bake for 15 minutes. Meanwhile, beat together the rest of the shortening, the confectioners’ sugar, 2 egg whites, and a teaspoon of vanilla. Add a dash of salt and stir well. Assemble the whoopie pies by spreading half of the cookies with a spoonful of filling and then topping with another cookie.
