Ingredients

  • 1 T. coconut oil
  • 1 T. maple syrup
  • 1 l onion, diced
  • 2 carrots, diced
  • 1 can pumpkin puree
  • 1 can unsweetened coconut milk
  • 3 garlic cloves, minced
  • 4 C. vegetable stock
  • 1 T. cumin
  • 2 tsp. coriander
  • ½ tsp. cinnamon
  • ½ tsp. cardamom
  • ¼ tsp. ground cayenne
  • ¼ tsp. ground cloves
  • Salt
  • Pepper
  • Garnish:
  • Pumpkin seeds
  • Cumin seeds

Directions

Heat the coconut oil, onions and carrots in a skillet. Let it cook for 5-10 minutes until they are softened. Add in the spices and garlic and stir. Pour the mixture into the crockpot. Add in the stock, pumpkin puree, and coconut milk. Let it cook for 8-10 hours on a low setting. Before serving blend the soup. Add in the maple syrup, salt and pepper if you desire. Top it off with a little bit of the pumpkin or cumin seeds.
