  • 1/4 C. white wine or water
  • 1/4-oz. dried porcini or shiitake mushrooms
  • 1 tsp. olive oil
  • 1/4 C. frozen chopped onion
  • 3 tsp. basil, chopped
  • 1/2 C. Italian Arborio or Carnaroli rice
  • 1 1/2 C. low-sodium canned beef broth
  • 1/8 tsp. crushed saffron threads, optional
  • 1/8 tsp. freshly ground pepper to taste
  • 1 Tbs. grated Parmesan cheese

Heat crockpot to medium and combine all ingredients.  Stir ingredients together thoroughly.  Cover the crockpot and let sit for about 2 hours or until the rice is tender.
