Wild Rice with Shallots and Green Peppers

Ingredients

  • 1 C. wild rice
  • 4 C. water
  • 1 chicken bouillon cube
  • pinch salt
  • 1/4 C. butter
  • 2 shallots, finely chopped
  • 1/2 sm. green pepper, chopped
  • 1 branch celery, chopped
  • 1/2 C. chopped walnuts
  • freshly ground black pepper

Directions

Soak the wild rice in water overnight, drain and wash well. Put the water, bouillon and salt in a sauce pan. Bring to a boil and add rice. Cook for 40 minutes, until tender. Melt the butter. Sauté the shallots, green pepper and celery for 3 minutes. Add the walnuts, pepper and rice.
