  • 16 oz chicken tenderloins,
  • 2 Teaspoons butter
  • 2 teaspoons olive oil
  • ¼ cup flour
  • 4 cloves garlic, minced
  • 12 oz mushrooms, sliced
  • ¼ cup white wine
  • 1/3 cup chicken broth
  • salt and pepper
  • ¼ cup fresh parsley, chopped
  • 2 tomatoes
  • 1 box spaghetti pasta
  • ½ parmesan cheese (optional)

Preheat the oven to 200°F. Cook the pasta as instructed on box, drain and set to side. Season the chicken with salt and pepper. Lightly cover with flour. Heat a large skillet on medium heat and add 1 teaspoon of butter and 1 teaspoon of olive oil. Add the chicken and cook for 5 minutes on each side, or until tender. Set into the warm oven when done. Add the remaining oil and butter and garlic to the skillet and cook for a few seconds. Proceed to add the mushrooms, salt and pepper, while stirring occasionally for 5 minutes, or until golden. Add wine, chicken broth and parsley. Stir and mix well, cooking until the liquid reduces by half. Mix the chicken, pasta and sauce together. Top with Parmesan cheese if desired.
