Ingredients

  • 1 very sm. sweet potato, peeled and cut into 1-inch cubes
  • 1 very sm. thin-skinned white potato, scrubbed and cut into 1-inch cubes
  • 1 sm. carrot, scrubbed and cut into 1-inch cubes
  • 1 very sm. turnip, peeled and cut into 1-inch cubes
  • 1 tsp. olive oil
  • 1/2 tsp. minced fresh thyme
  • salt, optional
  • freshly ground pepper to taste

Directions

In a vegetable steamer or colander place over simmering water, steam vegetables until just tender, about 10 to 12 minutes. Drizzle vegetables with olive oil and toss with thyme, salt and pepper.
