Winter Root Medley

Ingredients
- 1 very sm. sweet potato, peeled and cut into 1-inch cubes
- 1 very sm. thin-skinned white potato, scrubbed and cut into 1-inch cubes
- 1 sm. carrot, scrubbed and cut into 1-inch cubes
- 1 very sm. turnip, peeled and cut into 1-inch cubes
- 1 tsp. olive oil
- 1/2 tsp. minced fresh thyme
- salt, optional
- freshly ground pepper to taste
Directions
In a vegetable steamer or colander place over simmering water, steam vegetables until just tender, about 10 to 12 minutes. Drizzle vegetables with olive oil and toss with thyme, salt and pepper.
