  • 1 sm. head radicchio
  • 16 peperoncini in vinegar, drained
  • 2 C. cubed Italian bread
  • 1 med. red onion, chopped
  • 16 oil-cured black olives, pitted
  • 2 garlic cloves, minced
  • 1 Tbs. oregano leaves
  • 1/2 C. extra-virgin olive oil
  • 1/4 C. red wine vinegar
  • 1 tsp. salt
  • 1/2 tsp. pepper

Shred radicchio into thin slices. Remove stems and seeds from peperoncini and cut into 1-inch pieces. In a salad bowl, combine radicchio, peperoncini, bread, onion and olives. In a small bowl, combine garlic, oregano, olive oil, vinegar, salt and pepper. beat with a fork to blend. Pour dressing over salad and toss.
