  • 2 lb. stew beef, cut into chunks
  • 1/2 C. flour
  • 3 large potatoes
  • 2 medium carrots
  • 1 yellow onion
  • 1 medium acorn squash
  • 1/2 medium butternut squash
  • water, to cover, hot
  • 2 tsp. Worcestershire sauce
  • 3-4 sprigs thyme
  • salt and pepper, to taste
  • 1 bay leaf
  • 1 tsp. paprika
  • 1 (8 oz.) can tomato sauce

Put the beef chunks into the bottom of the crockpot and sprinkle with flour. Stir well to completely coat the beef. Peel and chop the vegetables into cubes. Put the vegetables in the crockpot. Pour in enough hot water to cover the meat and vegetables. Add in the tomato sauce, Worcestershire sauce, paprika, salt, and pepper. Stir well. Lay the bay leaf and thyme sprigs on top. Cover and cook for 6 to 8 hours on low.
