Ingredients
- 4 red potatoes, cut into 1/2-inch pieces
- 4 stalks celery, cut into 1/2-inch pieces
- 2 parsnips, peeled, cut into 1/2-inch pieces
- 2 leeks, cut into 1/2-inch pieces
- 1 (14-oz.) can vegetable broth
- 1/2 tsp. salt
- 1/2 tsp. dried thyme leaves
- 1/2 tsp. dried rosemary leaves
- 3 Tbs. corn starch
- 3 Tbs. cold water

Directions
Mix ingredients in crockpot except for corn starch and water. Cook on low for 8 to 10 hours. In small bowl, stir together corn starch and water. Stir into stew until blended. Cook on high for 20 minutes while stirring occasionally.
