Wintry Eggnog Cupcakes

- 2 C. cake flour
- 3 tsp. baking powder
- 2 C. eggnog
- 1 C. sugar
- 2 C. whipping cream
- 6 Tbs. sugar
- 3 Tbs. eggnog
- pumpkin pie spice or sprinkles, for garnish
Preheat the oven to 350 degrees. Line a muffin pan with Christmas-themed liners.
In a bowl, sift the flour, baking powder, and sugar. Mix well. Whisk in the eggnog until the batter is smooth without any lumps. Pour the mix 2/3 of the way into each cupcake liner. Bake for 20 minutes or until a toothpick comes out clean.
Cool the finished cupcakes on a wire rack prior to frosting.
Mix the remaining ingredients (except the pumpkin pie spice) using a stand mixer until it forms stiff peaks. Frost the cupcakes and dust with the pumpkin pie spice or sprinkles, as desired.
