  • 2 eggs
  • 1/3 C. sugar
  • 1/4 C. butter, melted
  • 1/4 C. maraschino cherry juice
  • 1 C. pineapple chunks in juice, drained
  • 1/4 C. frozen maraschino cherries, thawed
  • 1/2 tsp. almond extract
  • 2 C. flour
  • 1 T. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt

In a large bowl, add and combine well the eggs, sugar, butter, cherry juice, pineapple, and almond extract.
In a smaller bowl, sift flour, baking powder, baking soda, and salt. Combine wet and dry ingredients, and fold together gently until mixed.
Spoon into prepared pan. Bake at 400 degrees F for 20 minutes. Remove and cool. Top with whipped topping, and serve.
