Ingredients

  • 2 C. sliced carrots
  • 1 C. chopped celery
  • 1 small onion, chopped
  • 1/2 C. chopped green bell pepper
  • 1/4 C. butter
  • 4 1/2 C. chicken broth
  • 4 medium tomatoes, peeled and chopped
  • 4 tsp. sugar
  • 1/2 tsp. curry powder (optional)
  • 1/2 tsp. salt (optional)
  • 1/4 tsp. black pepper
  • 1/3 C. rice

Directions

In a large pot over high heat, sauté the carrots, celery, onion and green pepper in the butter until tender. Add the broth, tomatoes, sugar, curry, salt, black pepper and rice. Bring the mixture to a boil and then decrease the heat and simmer for 20 minutes.

Makes 2 qts. or 8 servings.

  • Oh my, this is so good. I started with uncooked rice. I was wondering if it should have been already cooked, but then I like my rice a bit on the crunchy side, so it turned out great.
