Wondrous Chicken Tacos Recipe

If you don’t feel like making beef taco’s then I suggest you try this quick and easy recipe for chicken taco’s.

Ingredients

  • 1/3 C. olive or vegetable oil
  • 1/4 C. lime juice
  • 4 garlic cloves, minced
  • 1 Tbs. minced fresh parsley or 1 tsp. dried parsley flakes
  • 1 tsp. ground cumin
  • 1 tsp. dried oregano
  • 1/2 tsp. pepper
  • 4boneless skinless chicken breast halves (1-1/4 lb.)
  • 6 (8") flour tortillas or taco shells, warmed optional toppings of your choice

Directions

In a large resealable plastic bag or shallow glass container, combine first 8 ingredients. Add chicken and turn to coat. Seal or cover and refrigerate 8 hours or overnight, turning occasionally. Drain and discard marinade. Grill chicken, uncovered, over medium heat for 5 - 7 minutes on each side or until juices run clear. Cut into thin strips; serve in tortillas or taco shells with desired toppings.

Yield: 6 Servings.
