This is one of the most interesting dishes I make for my family. I know if may look and sound strange but it is delicious. The use of hardboiled eggs mixed with crunchy potato chips and cream of mushroom soup makes this casserole a favorite on my list.

Ingredients

  • 5 large eggs, hardboiled
  • 1 7-oz. bag of potato chips
  • 1 can cream of mushroom soup
  • 1/2 C. milk

Directions

Grease casserole dish. Crush potato chips and put half of bag in casserole dish. Slice eggs and put on top of chips. Mix soup and milk. Pour over eggs. Top with remaining chips. Bake at 350 degrees for 20 minutes. Serve on warm toasted bread.

  • Now, listen up, PLEASE, this is a multi-person dish. How large are your "Heart Attack" portions anyway??? Moderation in all things, for God's sake!!! Stop taking the fun out of everything for everyone else. Some of us are skinny, too thin and need the weight, so here's my tip to you, put less on your plate, use a smaller plate, and PUT YOUR FORK DOWN BETWEEN BITES!! THIS ENABLES ONE TO CHEW EVERY BITE, WHICH AIDS IN DIGESTION. Also, if you eat a salad, or drink a glass of juice 1/2 ho

  • I made this for a New Years Eve party and received compliments. It isn't heart healthy but it is very good for ocasional use.The flavors are very good.

  • I've tried this several times & experiment w/something different each time. I used 6 eggs & on top of them, I added a layer of fried crumbled sausage (or fried cumbled bacon or fried diced ham), poured the milk/soup mix, added a layer of 1 cup shredded cheddar cheese & topped w/chips...yummy! Next time, I think I'll use shredded hash browns for bottom layer & save chips for top. This recipe has so many possiby layering ingredients, limited only by your imagination & taste pr

  • Sounds rich and delicious! I make a tuna casserole using potato chips. It may sound lika a heart attack but you got to reward yourself occasionaaly! You don't have to eat it everyday just enjoy it when you do make it. I know I will. Thank you!
