  • 2 cups crushed chocolate cookies
  • 5 tablespoons butter, melted
  • 3 8oz packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/3 cup sour cream
  • 9 oz cherry flavored baking filling
  • 21 oz cherry pie filling, chilled
  • Mint to garnish

Preheat oven to 350 degrees. Place a spring form pan in the middle of two large pieces of aluminum foil, and bring the foil up over the sides of the pan. Make sure the foil is tight and secure around the pan so no water gets in while baking. Combine chocolate cookie crumbs and melted butter together in a bowl and mix thoroughly. Press graham crackers into the bottom of the pan and bake for 10 minutes. Remove and allow to cool. Beat cream cheese and sugar together in medium sized bowl until smooth. Add eggs one at a time and mix each egg until completely incorporated. Add vanilla extract, heavy cream, and sour cream and continue to mix on high speed until the mixture is completely smooth. Add cherry flavored baking filling. Pour mixture into crust, and place cheesecake into a roasting pan. Bring a pot of water to a boil. Place roasting pan in the oven and pour boiling water into the roasting pan. Bake for 45-55 minutes until cheesecake is set. Turn off oven and allow cheesecake to cool for 1 hour. Remove cheesecake from oven and water bath. Chill cheesecake in refrigerator overnight. Spoon cherry pie filling over the top of cheesecake and serve.
