Farfalle is a butterfly shaped pasta and it is especially fun to cook with. This recipe is a little spicier, but the spice is balanced out with sharp parmesan cheese.

  • 1 package farfalle
  • 1 chili
  • 2 tablespoons extra virgin olive oil
  • 1 can of Italian peeled tomatoes
  • 2 tablespoons oregano
  • ½ white onion, minced
  • Salt and pepper
  • 3 cloves garlic, minced
  • 1 cup grated parmesan

Chop up your veggies: the onion, garlic, and chili. Heat the olive oil in a large skillet and saute the vegetables. In a blender, blend the tomatoes and then pour them into the skillet. Stir and reduce heat to low. Mix in the oregano. Cover and cook for 25-30 minutes. Taste, adding salt and pepper as needed.

While the sauce is cooking, prepare farfalle according to package instructions. Drain the pasta and pour into a large casserole dish with the sauce. Generously sprinkle the parmesan on top, and serve immediately.
