Yams and Apples
Ingredients
- 2 Granny Smith apples
- 2 16-oz. cans yams, drained
- 1 stick unsalted margarine
- 1/2 C. firmly packed brown sugar
- 1/2 C. dark brown syrup (molasses)
- 1 tsp. cinnamon
- 1/8 tsp. salt
Directions
Peel, core and slice apples. Puree yams with 6 Tbs. margarine, brown sugar and dark brown syrup. Add cinnamon. Spread 1/2 yam mixture in baking dish. Arrange 1/2 of the apples over the yams. Repeat layering and brush top layer of apples with remaining margarine. Bake uncovered in a 350-degree oven until heated through about 35 minutes.
