This side dish is one of the staples at my favorite Middle Eastern restaurant. Try it out, it's buttery and delicious!

  • 1 1/2 C. long-grain rice
  • 2 Tbs. olive oil
  • 1 onion, diced
  • 1 carrot, diced
  • 1 tsp. turmeric
  • 1 tsp. cumin
  • 1/4 tsp. paprika
  • salt
  • pepper
  • 1 Tbs. butter
  • parsley, for garnish

Fill a saucepan with water and bring to a boil. Add salt and rice and turn heat to low. Cover and cook for 20 minutes, or until the rice is tender but firm. Drain and place into the serving dish. 

While the rice is cooking saute the vegetables in the oil until they soften, about 5 minutes. Add the spices and butter and cook until fragrant. Dump the onion mixture into the rice mixture and stir until well combined. 

Add salt and pepper as desired and serve immediately.
