Yellow Squash And Tomatoes Casserole

Baked with a creamy sauce and plenty of cheese, this vegetable casserole comes out perfect.

Ingredients

  • 2 lbs. yellow squash, sliced, and half cooked 1/4 lb. bacon, chopped
  • 1/2 c. onions, chopped
  • 1/2 C. celery, chopped
  • 1 C. green onion, chopped, tops and bottoms 1 1/2 c. tomato, chopped
  • 1/2 C. Cream Of Mushroom soup
  • 1/2 C. breadcrumbs
  • 1 C. American cheese, shredded
  • salt and pepper, to taste

Directions

Fry bacon until crisp. Add onion, celery, and green onions. Sauté until soft. Add tomatoes, soup, and bread crumbs. Mix with the squash. Place in a casserole. Top with cheese. Bake for 1/2 hr. at 350.
