Yellow Tomato Preserves

Flavored with ginger and lemon, these preserves would be great on cornbread or crackers.

  • 2 qts. (about 2 1/2 lbs.) small yellow tomatoes
  • 1 lemon, cut in thin slices
  • 1/4 lb. candied ginger chopped or 1 1/2 tsp. ground ginger
  • 5 C. sugar

Mash tomatoes and remove stems but do not peel or slice. Combine all ingredients and 1 C. water. Bring to boil and simmer 2 hrs. or until thick. Pour into hot sterilized jars & seal. Process in hot water bath 20 mins. If you plan to use the preserves very soon, no need to process.
