Yogurt Biscuits

These biscuits are so light and moist, and also keep well!

Ingredients

  • 2 1/2 C. flour
  • 1 C. yogurt
  • 1/3 C. milk
  • dash salt
  • 4 Tbs. olive oil

Directions

Place yogurt, milk, and salt into a large bowl, and add the flour. Cut it together with a fork. When the mix gets thick enough that the fork comes out almost clean, it is ready to turn out on a flat surface for rolling.

Spread flour thinly on a flat surface and turn the mix onto it. Push the flour down from the top until it begins sticking to your fingers. At this point, flip the dough and repeat (kneading). Continue doing this until the dough is flat and at the desired height (recommendation: 1/2-inch high). Cut the dough with a glass (with a floured rim). Spray the bottom of a cast iron skillet or round cake pan with non-stick pan spray, and preheat oven to 450 degrees.

Add 4 Tbs. olive oil to the pan, spreading evenly. Place smooth side of biscuits in olive oil, then flip so that the other side is covered in olive oil too, and place on pan. Bake until golden brown (approx. 15 minutes).
