Ingredients

  • 2 C. whole-wheat pastry flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 C. low-fat yogurt or soy yogurt
  • 1/4 C. low-fat milk or rice milk
  • 1/4. C. safflower oil
  • fruit preserves, apple butter, cream cheese, butter, or margarine

Directions

Preheat the oven to 400 degrees and lightly grease a baking sheet.  Combine the flour, baking powder, baking soda, and salt.  In another bowl, whisk the yogurt, milk, and oil together.  Make a well in your powder mixture and slowly pour in the wet mixture.  Work the two mixtures together to create a firm dough.

Put the dough onto a well-floured board.  Knead for 1 to 2 minutes, adding additional flour if the dough becomes sticky.

Roll the dough out until it is about 1/2 inch thick and cut into 2 inch circles with a biscuit cutter, round cookie cutter, or drinking glass.  Place 1 inch apart on baking sheet and bake for 12 to 15 minutes, or until golden brown.

Serve with fruit preserves, apple butter, cream cheese, butter, or margarine.
