Yogurt Sundaes with Fresh Fruit

This fresh, creamy and delicious yogurt sundae can be made with whatever season fruit you prefer.

Ingredients

  • 1/4 C. ripe blackberries, cut in half
  • 1/4 C. sliced fresh strawberries
  • 6 green seedless grapes, halved
  • 2 sm. ripe apricots, pitted and cut into 8 wedges
  • 1 lg. ripe red plum, pitted and cut into 8 wedges
  • 1 Tbs. fresh lemon juice
  • 1 tsp. sugar, optional
  • 1 Tbs. minced fresh mint or cilantro
  • 1 1/2 C. plain nonfat yogurt

Directions

In a small bowl, combine the fruit, lemon juice, sugar and mint. Toss lightly to mix.

Starting with a spoonful of fruit mixture, make alternating layers of fruit and yogurt in a large goblet or tall glass. Eat at once or cover with plastic wrap an refrigerate overnight.
