Ingredients

  • Crust:
  • 2 C. chocolate cookie crumbs
  • 3 T. butter, melted
  • Filling:
  • 4 packages of cream cheese, softened
  • 3 eggs
  • ¾ C. sugar
  • ½ tsp. almond extract
  • ½ C. whipping cream
  • 1 can cherry pie filling
  • Glaze:
  • ½ C. whipping cream
  • 1 C. semisweet chocolate chips

Preheat the oven to 325 degrees. In a bowl, mix together the crust ingredients. Press the mixture into a spring form pan. In another bowl, beat the cream cheese with an electric mixer. Add 1 egg at a time, the sugar and the almond extract. Add in ½ C. of whipping cream, mix well. Layer the filling on top of the crust. Let it bake for an hour and cool for another hour. While it cools, heat up the ½ C. of whipping cream over a medium heat. Remove the heat and stir in the chocolate chips. Pour this mixture over the filling and let it cool for 10-15 minutes. Serve and enjoy.
