You can’t have Thanksgiving without sweet potato pie! Add a little whip cream or a lot to top it off and you’ll be in paradise.

  • 1 ¾ C. flour
  • 8 T. butter, melted
  • 1 tsp. salt
  • 2 C. sweet potatoes, boiled and mashed
  • 1 C. sugar
  • ½ C. evaporated milk
  • 1 T. vanilla extract
  • 2 eggs, beaten

Put 8 T. of butter and ½ tsp. salt into a food processor. Add ¼ C. cold water and let it pulse until the dough is formed. Preheat the oven to 375 degree. In a bowl, mix together the remaining butter, salt, sugar, milk, sweet potatoes, vanilla extract, and eggs until it's smooth. Take the dough and place it on a flour surface. Roll it down with a rolling pin and transfer it onto a pie pan. Trim excess dough from the edges. Pour the filling into the pie pan when the crust is placed inside. Let it bake for an hour.
