  • 1 egg
  • 3 T. cornstarch, divided
  • pinch salt and pepper
  • 1 lb. boneless skinless chicken thighs, cut into one-inch pieces
  • 2 T. vegetable oil
  • 2 T. soy sauce
  • 1 T. water
  • 1 T. toasted sesame oil
  • 1 1/2 T. brown sugar
  • 1 1/2 T. rice vinegar
  • 1 in. fresh ginger, grated
  • 1 clove garlic, minced
  • 2 T. sesame seeds

In a large bowl, combine egg, two tablespoons of cornstarch, salt, and pepper. Add chicken pieces into the egg mixture and toss to evenly coat. Pour vegetable oil into a large skillet and heat until very hot over medium heat. Cook chicken until golden brown on all sides. Meanwhile, stir together the remaining ingredients in a small bowl. Once the chicken is cooked, drizzle with sauce and mix well. Continue cooking until the sauce thickens and the chicken is well coated. Serve over rice.
