  • 3 Cups of Uncooked Medium-Grain White Rice
  • 6 Tablespoons of Rice Vinegar
  • ½ Cup of Soy Sauce
  • ¼ Cup of Oyster Sauce
  • ½ Cup of Sugar
  • 12 Ounces of Cooked Spam
  • 4 Sheets of Dry Seaweed

To begin, wash the rice until the water runs clear and place it in a saucepan with water. Let the rice soak for 30 minutes before draining it and transferring it to a rice cooker or heavy pot with 4 cups of water, covered, over a medium-high heat. Bring it to a boil and then reduce the heat to let the rice simmer for 15 minutes, stirring in the rice vinegar before turning the heat off and letting it remain covered for another 15 minutes.

Cut the seaweed in half widthwise and put it in a resealable bag so that it doesn’t dry out. Then, cut the spam into 8 equally-sized pieces and fry them over a medium heat until they’re browned and crispy, letting them drain on paper towels. In a saucepan over high heat, combine the soy sauce, oyster sauce and sugar until they boil and then remove them from the heat, coating the spam slices and letting them marinade in the sauce until needed.

Place a rice press in the center of a seaweed sheet, press the rice tightly inside, and then cover with a slice of spam before removing the press. Wrap the seaweed around and use water to seal the edges. Serve warm or cool!
