This is one of my favorite recipes because it is delicious and quick to make. This recipe was handed down from my step son's grandma. She enjoyed cooking for her 16 grand children and insisted on having traditional Sunday dinners for all of them well into her 80s.

  • 3 lbs. boneless skinless chicken, cooked and chopped
  • 1 10-oz. pkg. frozen spinach, chopped
  • 1/2 C. finely chopped onion
  • 1/2 tsp. garlic powder
  • 8 oz. fresh mushrooms, sliced
  • 2 Tbs. margarine, melted
  • 1 C. low-fat shredded mozzarella cheese

Cook spinach according to package instructions, eliminating salt; drain well. Mix onions with spinach. Arrange spinach and onions in bottom of 2-qt. baking dish; sprinkle with 1/4 teaspoon of garlic powder. Arrange mushrooms on top of spinach and drizzle with melted margarine. Place chopped chicken on top of mushrooms and sprinkle with remaining 1/4 tsp. of garlic powder. Top with mozzarella cheese. Place in a 350-degree oven and bake for 30 minutes.
