- 3 lb. small red potatoes, peeled
- ⅔ C. sour cream
- 3 Tbs. butter
- 1 tsp. garlic, minced
- 4 whole green onions, sliced
- Salt and pepper

Directions
Bring the potatoes to a boil in a large saucepan. Once they’re tender, drain the potatoes and put them in a large bowl. Add the rest of the ingredients and mash the potatoes until they’re creamy and slightly chunky. Top with additional green onions.
