  • 1 T. mustard
  • 1 T. olive oil
  • 1 tsp. salt
  • 1 tsp. pepper
  • ½ lb. brussels sprouts, trimmed and sliced
  • 1 ½ lb. potatoes, diced
  • 3 bacon strips, diced

Preheat the oven to 425 degrees. In a bowl, mix the mustard and olive oil. Add in the salt and pepper. Add the prepared sprouts and diced potatoes into the bowl. Mix well. Transfer mixture into a skillet. Sauté mixture for 5-10 minutes. Remove the mixture from the skillet and onto a baking pan. Bake for 1 hour. Meanwhile, in the same skillet brown the bacon. Remove baking pan from oven. Sprinkle the cooked bacon over the top. Serve and enjoy.
