Yummy White Pizza with Spinach and Bacon

- 12 cloves unpeeled garlic
- 4 teaspoons extra-virgin olive oil
- 1 tablespoon cornmeal
- 12 oz refrigerated pizza dough
- 2 slices bacon cut into 1 inch pieces
- 1 10 oz package frozen spinach
- Salt and pepper
- 1 cup ricotta cheese
- 3/4 shredded mozzarella cheese
Preheat oven to 325 degrees. Place garlic on a sheet of foil and sprinkle with 1 teaspoon olive oil and 1 tablespoon water. Seal and bake for 30 minutes, until soft. Let cool slightly and squeeze cloves from skins into small bowl. Add 2 teaspoons olive oil and beat into paste.
Grease baking sheet with remaining olive oil and dust with cornmeal. Stretch pizza dough into rectangle on prepared baking sheet. Let the dough rest for 10 minutes. Preheat oven to 425 degrees and position a rack in the lower third. Cook bacon over medium heat for 5 minutes in a medium sized skillet, stirring often. Transfer to a plate. Add spinach to skillet and cook over low heat until thoroughly heated. Season with salt and pepper.
Spread garlic paste over pizza dough, then top with spinach and ricotta. Sprinkle bacon and mozzarella over the top and bake for 15 minutes. Lower the temperature to 400 degrees and bake until cheese is bubbling and brown, about 10 minutes.
