This deceivingly neutral-looking dish is a unique shrimp recipe, but don't let it's muted colors fool you! The mustard greens give this dish a nice tang, while the slow-cooked carrots will balance the flavor.

Ingredients

  • 1/2 lb Shrimp, Cooked
  • 2 Bundles of Mustard Greens
  • 1 Medium Onion, chopped
  • 2 Chopped Carrots
  • 1 can Chicken Broth
  • 1 Clove Minced Garlic
  • ΒΌ Cup Olive Oil
  • Salt & Pepper, to taste

Directions

In a large stockpot or stewpot, bring water to a boil. Add greens to pot and boil for 10 minutes, before reducing heat to medium. Cook on medium for an additional 30-35 min. Sautee onions and garlic in olive oil. Add salt and pepper, stir in chicken broth. Place greens in crockpot, along with onions and garlic. Cover and cook on high for 2 hours. Add shrimp and carrots and cook in high for an additional 2 hours. When serving, place shrimp and carrots on bed of greens.
