  • 2 Tbs. lime juice
  • ΒΌ tsp. pepper
  • 4 oz. uncooked rice noodles
  • 2 Tbsp. olive oil
  • 1 lb. uncooked shrimp
  • 1 (4 oz.) jar of anchovies
  • 2 Tbs. green onion, chopped
  • 2 green Thai Chile, sliced
  • 1 red Thai Chile, sliced

In a medium mixing bowl, marinate shrimp in lime juice in refrigerator for at least 30 minutes. Boil a pot of water on high heat. Cook noodles according to directions leaving out salt and fat. Stir occasionally for 8-10 minutes. Once cooked, drain and run under cold water.

In a large skillet, heat olive oil. Add shrimp and cook for 3-4 minutes or until golden brown. Remove from heat. Distribute noodles into bowl and lay shrimp on top. Add desired amount of anchovies, onion and Chiles.
