  • 1 pkg. yellow cake mix
  • 1 pkg. lemon pudding
  • 1 egg
  • 1/2 C. vegetable oil
  • 1 (8 oz.) pkg. cream cheese
  • 1/3 C. sugar
  • 6 Tbs. lemon juice
  • 2 Tbs. lemon zest

Preheat the oven to 350 degrees. In a bowl, combine the eggs, oil, pudding mix, cake mix, and 1 Tbs. lemon zest. Mix well until slightly dry and crumbly. Set aside 1 C. mixture for the topping. Spread the rest in a lightly greased 9-in. square cake pan. Bake for 15 minutes, then set aside to cool.

While the crust is baking, combine the sugar, cream cheese, 1 Tbs. lemon zest, and lemon juice. Beat on medium until well combined. Spread this mixture evenly on top of the crust and top with the remaining dry mix. Bake for 20 to 25 minutes, or until it is set and the top is golden brown.

Cool completely and cut into squares. Refrigerate until chilled, then serve.
