Ingredients

  • 1/2 C. mayonnaise
  • 3 Tbs. agave sweetener
  • 1/4 C. soy milk
  • 1/4 C. plain yogurt
  • 2 1/2 Tbs. lemon juice
  • 1 1/2 tsp. apple cider vinegar
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 8 C. cabbage, chopped
  • 1/4 C. carrots, shredded
  • 2 Tbs. onion, minced

1. Be sure cabbage and carrots are chopped into very fine pieces (about the size of rice). 2. Combine the mayonnaise, agave sweetener, soy milk, yogurt, lemon juice, vinegar, salt and pepper in a large bowl and beat until smooth. 3. Add cabbage, carrots, and onion, mix well. 4. Cover and refrigerate for at least 2 hours before serving.
