Zesty Egg Salad For Two

The perfect amount for a lunch for two.

Ingredients

  • 3 hard-cooked eggs
  • 3 Tbs. mayonnaise
  • 1 Tbs. prepared mustard
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. lemon juice
  • 1 Tbs. minced green onion

Directions

In a small bowl, combine mayonnaise, mustard, salt, pepper, and lemon juice. Stir in eggs with a fork, chopping them into bite-sized pieces. Add green onion.

  • Great recipe regardless to typo. Obviously these people knew it was an error so what was the big deal. Still great recipe and people can change it however they want. GREAT RECIPE!!!!!!

  • OK guys so it was a TYPO, of course it's a tsp & not a TBS!! Lighten up!! This is a delicious recipe, & I disagree w/ Patrick, the small amount of prepared mustard, is much better than dry mustard, it's creamier & blends very well. The lemon juice is a tiny amount, tastes great either way, w/ or w/o. And I never ever heard a red lettuce leaf makes a sandwich smoother & tastier!! It adds CRUNCH, & a little bit of flavor, altho I prefer iceberg for crunchiest flavor. Seasonings

  • lose the lemon juice and prepared mustard, add 1/8 tsp dill, and 1 tsp dry mustard, for a smoother tastier sandwich, garnish with a red lettuce leaf.

  • Thinking that the salt, pepper and lemon juice were supposed to be 1/8 tsp instead of Tbs...if thats the case then that's egg-zakly how I make my egg salad so would give it 5 hats!
