  • 4 fillets halibut, 6 oz. each
  • 2 limes, cut into 4 wedges
  • 2 tsp. dried dill
  • 3 cloves garlic, coarsely chopped
  • 1/2 cup fresh cilantro, minced
  • 1 tbsp. fresh lemon juice
  • 3 tbsp. butter, melted

Preheat the grill to high heat. Squeeze 1 lime (4 wedges) over each of the fillets and season with dill, salt, and pepper to taste. Grill each fillet for about 5 minutes on both sides until brown and fully cooked. In a small bowl, mix butter, lemon juice, cilantro, and salt and pepper to taste. Brush each fillet with with the butter mixture and serve with a wedge of lime on the side.
