Meatballs are a perfect potluck food because they can be eaten with pasta or a la carte. This Italian dish is low maintenance and can be made the day before your event, simply turn the crockpot on low to rewarm and enjoy.

Ingredients

  • 1 lb. ground pork
  • 1 lb. ground beef
  • ¼ C. diced onion
  • 2 cloves garlic
  • 2 T. parsley
  • 1 C. Italian breadcrumbs
  • 2 eggs
  • ½ C. parmesan cheese
  • 1 can tomato paste
  • 2 cans crushed tomatoes
  • 2 whole bay leaves
  • ½ tsp. crushed red pepper flakes
  • ½ tsp. Italian seasoning
  • ¼ tsp. Salt
  • ¼ tsp. pepper
  • Fresh basil
  • Shredded mozzarella

Directions

Preheat oven to 350 degrees. Combine pork, beef, onion, minced garlic, parsley, bread crumbs, eggs and parmesan cheese in a large bowl. Mix with your hands until well combined.

Create meatballs 1-2 inches in diameter and place on a lightly greased baking sheet. Cooking the meatballs for 5 to 7 minutes or until slightly browned.

Place the meatballs in the crock-pot. Mix tomato paste, crushed tomatoes, bay leaves, red pepper flakes, Italian seasoning, and pepper in a bowl. Pour tomato sauce over meatball in slow-cooker. Cook on a low temperature for 4 hours. Garnish with fresh basil and shredded mozzarella and enjoy.
