  • 1/2 C. olive oil
  • 1/4 C. red wine vinegar
  • 2 tsp. minced shallot
  • 2. tsp. Dijon mustard
  • 1 clove garlic, minced
  • 1/2 tsp. dried Italian seasoning
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 4 fresh sub buns
  • 4 T. mayonnaise
  • 12 slices Genoa salami
  • 8 slices provolone cheese
  • 2 large tomatoes, thinly sliced
  • 1 small sweet onion, chopped
  • 1 C. butter lettuce leaves

In a medium bowl, whisk together olive oil, vinegar, shallot, mustard, garlic, and seasonings. Open each roll and spread the bottom with one tablespoon of mayonnaise and sprinkle with onion. Evenly distribute cheese, salami, tomato, and lettuce. Whisk dressing again and generously drizzle on top of each sandwich before covering with the remaining bun. Serve.
