  • 1 ¼ C. all-purpose flour, divided
  • 1/3 C. powdered sugar
  • ¼ C. cornstarch
  • Dash salt
  • 1 ½ sticks butter, divided
  • 4 eggs
  • 1 C. sugar
  • 2/3 C. lemon juice
  • 1 T. lemon zest
  • ½ tsp. baking powder
  • Dash salt
  • ½ C. brown sugar

Preheat oven to 350 degrees. Using a food processor, pulse together ¾ cup of flour, powdered sugar, cornstarch, and salt. Add in 1 stick of butter and pulse until crumbly. Press mixture into the bottom of a greased baking pan. Bake for 20 minutes until golden, set aside to cool, and reduce oven temperature to 325 degrees. In a bowls, beat eggs until thick, and then beat in sugar, lemon juice, lemon zest, ¼ cup of flour, baking powder, and salt. Once smooth, pout over crust. In a bowl, combine remaining flour, brown sugar, and remaining butter until crumbly. Sprinkle over lemon filling and bake for 20 minutes until center is set.
