  • 1 T. butter
  • 2 eggs
  • 1 C. skim milk
  • 1 T. condensed milk
  • 3 T. flour
  • 1/8 t. salt
  • 1/4 C. lemon juice
  • 2 tsp. grated lemon peel
  • 1 pie shell
  • 1 mint leaf

Preheat the oven to 325° F. Then, in a bowl, combine the butter and sugar until well blended and proceed to add the egg yolks. Once the mixture is smooth, add the milk, condensed milk, flour and salt. Sprinkle in the lemon juice and peel. Pour the mixture into the pie shell and let it bake for about an hour. Garnish with mint leaves.
