Tabouli is a traditional Middle Eastern dish that packs a huge flavor punch. The parsley in it is really good for you and the quinoa is a healthy substitution for the traditional bulgar wheat.   • 1 C. quinoa, cooked
  • 2 large bunches of parsley
  • 1 handful fresh mint
  • 1/2 C. lemon juice
  • 1/2 C. oil
  • 4 medium tomatoes
  • 4 cucumbers, diced
  • 8 green onions, chopped
  • salt and pepper, to taste
  • pinch of allspice

In a food processor or blender, chop the parsley, mint, and green onions roughly. Dice the tomatoes and cucumbers. Add the parsley, mint, and green onions to the the tomatoes and cucumbers in a bowl. Mix in the allspice, salt, and pepper. Gradually add the lemon juice and oil, tasting and tossing until the preferred taste is achieved.
