  • 2 lbs. pork baby back ribs, membrane removed
  • 1 Tbs. unsalted butter, melted
  • 2 Tbs. garlic, minced
  • 2 Tbs. fresh rosemary, chopped (more to garnish if desired)
  • 1 ½ Tbs. olive oil
  • ½ tsp. cayenne pepper
  • ½ tsp. lemon zest
  • Salt to taste
  • Pepper to taste

Cut the ribs into sections so that each section has about 4 ribs. In a baking dish, combine butter, garlic, fresh rosemary, olive oil, cayenne pepper and lemon zest. Season ribs with salt and pepper. Place in baking dish and brush mixture to coat the ribs.

Cover and refrigerate for 2-3 hours. Preheat grill to medium heat and grease. Once heated, place ribs with bone side up. Cook for about one hour, only turning once. Meat should be tender or easy to pull away from the bone. Garnish with rosemary if desired and serve.
